How to cook perfectly spicy Maggi

It’s easy.. You need 1 pack of Maggi. Use a non stick pan and add 1 cup of water. Then add the spice mix. This step is important to put the spice mix before putting noodles. Then mix and allow the water to heat up but don’t boil. Then take Maggi and split in the middle to split the two layers. Put each layer in the pan. Wait 1 minute and then turn each layer. In 1 minute it should start softening. Then use a flat spatula to carefully split the noodles. Do not put pressure or break them. Mix and allow water to start boiling. In about 2 minutes water will be there but not completely gone. Then here’s the trick to get spicy taste… Add hot sauce. I use LA Victoria Salsa brava hot sauce. Add maybe 1 tablespoon. Mix thoroughly and then allow water to dry. It’s ready. Serve in a bowl.
Of course you can put veggies. I just made mine plain.

Awesome Spicy Chicken Curry Recipe

This is my own style of making spicy chicken curry.

Marinade:

  • 1lb boneless chicken breast cut into small pieces (~1 in pieces)
  • 1 cup plain yogurt
  • 1 tsp Red Chili Powder
  • 1 tbsp Salt (or as per taste)
  • 1 tsp Turmeric
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 0.5 tsp Garam Masala
  • 3 garlic cloves minced
  • 1  small piece of ginger minced (~.5 oz)

Mix all the ingredients in a bowl and keep overnight in the fridge

Tomoto Puree:

  • 3 big roma tomatos
  • 3 garlic cloves minced
  • 1  small piece of ginger minced (~.5 oz)

Put everything in a blender and make the puree

Curry:

  • 3 big red onions thinly sliced
  • 1 tbsp Salt (or as per taste)
  • 2 tbsp Meat Masala
  • 1 tsp Red Chili Powder
  • 1 tsp Garam Masala
  • Canola Oil (4 tbsp or 0.25 cup)
  • Cilantro Chopped (0.5 cup)

Saute onions in oil until golden brown. Then add marinated chicken one piece at a time (if you put all at the same time then they won’t saute well).

After all chicken pieces are lightly sauteed, add Salt, Meat Masala, Red Chili Powder and Garam Masala. Stir.

Add tomato puree and let it cook well. Keep stirring from time to time. Two ways you can tell tomatos are cooked – taste should not be like raw tomatos and you should see oil separating out.

Let it simmer for 1 hour.

Garnish with chopped cilantro leaves.

Fiddlehead Ferns

Yes, you can get these in US! You just have to pay more. Unless you are local to the region where these are grown in US, you will need to order from online sellers. I ordered mine from Earthy Delights. Since these are perishables, only overnight shipping is provided. Be smart and order more than a lb in order to make it a worthwhile deal. For the ones I ordered, I am yet to savor their taste… but I am quite sure they will be wonderful! Close examination did tell me that they are not same as what you may find in Himalayas. Mine had shoots chopped…

Update: they turned out to be pretty tasty. Here’s a picture of the cooked version Indian style

Made up the recipe myself. Turned out to be quite tasty.

About a 1lb of Chicken Breast cut into small pieces

Batter – Wheat flour (3 Tbsp), 3 egss, Salt, Paprika, Milk (1 cup). Whip everything until somewhat thick. If too runny add more flour.

Mix batter and chicken pieces, until chicken is thoroughly coated. Fry them for 10-12 minutes @375 deg F in deep fryer.

Serve with Sauce of your liking. I used Frank’s Buffalo Sauce.
